Chilean Dinner

Tonight we had our friends the Alonsos over for dinner.
He is from Brazil and she is of Chilean (Jake served his 2 year LDS mission in Chile) decent.  I recently learned (thanks to Facebook) that she served her mission with a girl from my hometown, and the older sister of my college roommate Sabrina Packard.  Once again, small world.
The kids had so much fun playing.  Lucas their son speaks both Spanish and Portuguese so Jake thoroughly enjoyed speaking to him in Spanish.  Mali Su called him "Uncle Luke" and Jake asked her if Uncle Luke had been reincarnated into the body of a half Chilean half Brazilian boy.  Aimi Lark then chimed in saying his name was Uncle LUCAS.

Today I tried my hand at a Chilean dessert.  I love the Internet, I searched and I found what I needed.  I made...

Ingredients :
1/4 cup plus 3 Tbsp. butter
1/4 cup plus 3 Tbsp. sugar
1 x egg, beaten
3/4 cup plus 2 Tbsp. flour
1 can condensed milk
Method :
* Cream together butter and sugar; add egg and flour and mix well. Drop by scant teaspoonfuls onto cookie sheet.Pat with a floured finger into very thin little circles (quarter to half dollar size). Bake at 325 degrees for 10-12 minutes, until just starting to brown around edges.
* Sandwich two cookies together with cooked condensed milk.To cook condensed milk, place entire, unopened can in a large saucepan, cover with water.Bring to boil and simmer about 2 hours. This turns it into caramel.

Jake LOVED these cookies and I really liked them myself.
They were filled with what some call manjar and others dulce de leche.
It was such a fun night, I just wish we had done stuff like this more often with them.
But like Marcela said, sometimes life just gets in the way.
I need to make sure life doesn't get in the way of hanging out with fun friends anymore!

20 Weeks

Today we had the opportunity to go in for our 20 week ultrasound. We are excited to announce that baby #3 is a healthy BOY! We are excited but have to admit we are a bit nervous. Change is hard and after two girls this is definitely a change. It will be a fun and wonderful experience. I have already thought about little boy ACUs and PT clothes (little army clothes) and what I will decorate the "boy" room in etc. I have always heard boys are "easier" but more rambunctious so I guess we will just have to see. I was excited that during the ultrasound our little boy was crossing his legs at the ankle like both his sisters do! So funny! We will keep y'all posted on names and other developments.

Halloween 2023

We pulled off our best Halloween!  Possibly ever!  Jake had a vision and it came true beautifully.  He even had the cutest song he sang.  I loved our last Halloween in our Hurst home.

sometimes life may get you down

but then you remember how wonderful you husband is and it makes it all ok. Jake surprised me by ordering these gorgeous handmade pearl earrings from TINY STORM for me for Christmas and they were waiting for us with all our mail when we arrived back home after vacation. He got down on one knee and presented me with these earrings and it brought tears to my eyes. I am so grateful to have such a wonderful, hardworking, and loving husband who is always there to take care of me and love me when I am having a rough time. Thank you Jacob!
